The Perfect Vegan Banana Bread MUFFINS... WITHOUT FAIL!

So, if you've been following me for a while, you've probably noticed that I'm baking A LOT of Vegan Banana Bread Muffins. In fact, for the past month or two, I've been baking these babies weekly because Dom and I just can't get enough of them -- I'm actually eating one as I write this! It's the perfect amount of sweet, while still being (relatively) healthy... compared to other muffins and they're the EASIEST muffins to make! ;)

* This recipe makes 12 muffins* Preheat oven to 350° F

DRY INGREDIENTS:

- 1 1/2 C all purpose flour

- 1/2 C coconut sugar

- 1/4 C brown sugar

- 1 TSP ground cinnamon

- 1/2 TSP ground nutmeg

- 1 TSP baking powder

- 1/2 TSP baking soda

- 1/2 TSP salt

Wet Ingredients:

- 1 1/2 bananas

- 1/4 C coconut oil

- 1/4 C olive oil

- 1/2 C canned coconut milk


1) Preheat oven to 350° F

2) Line muffin pan with paper muffin cup liners OR grease pan if you don't have liners

3) Mix dry ingredients together in large bowl

4) In blender (I like to use my nutribullet bc its quick and small) mix wet ingredients together

5) Pour wet mixture into dry mixture

6) Mix everything together until its JUST mixed - don't overmix

7) Scoop muffin batter into muffin cups

8) Sprinkle tops of muffins w/ brown sugar to melt and crisp on top

9) Place in oven for 21 minutes (cooking times vary based on your oven. This is the perfect amount of time for mine)

10) Take out of oven, let cool, ENJOY!

** you can add blueberries, vegan chocolate chips, or pecan to this and it tastes AMAZING! Tag me in a photo if you try this recipe!! :)
